Register via FoodTrader (foodtrader.vic.gov.au). Knox processes FoodTrader applications within 14 business days; SOTs processed within 2 business days. Annual Food Act registration, valid calendar year, paid by 31 December. Late renewal penalty: 25% surcharge if unpaid by 31 December. EHO inspection required before registration granted. SOT required via FoodTrader at least 1 business day before each trading event. Food Safety Supervisor required for Class 2 premises. Food Act registration fee not published — invoiced after assessment; contact Environmental Health on 9298 8000 for estimate. ROADSIDE TRADING PERMIT (separate from food reg, required to trade on Council land/roadsides/carparks/footpaths/reserves — does NOT apply to VicRoads-controlled roads): Apply at least 21 working days before trading. PLI $20M minimum with Knox City Council as interested party. ROADSIDE PERMIT FEES (2026-27): 1 day $469 (incl. $196 non-refundable app fee); 1–7 days $731 (incl. $196 app fee); up to 1 month $1,694 (incl. $196 app fee). Contact Local Laws: 9298 8000.
